Ingredients
  

  • 6-8 ounces burrata
  • 2 cups cherry or grape tomatoes  halved
  • 1/4 cup pesto * prepared or homemade
  • 1 tablespoon balsamic glaze  or balsamic vinegar, optional
  • Freshly ground black pepper to taste
  • Sea salt to taste

For serving

  • 1/2 baguette sliced and toasted or whole grain crackers

Notes

*To make a quick pesto: add a bunch of fresh basil, 1/4 cup pine nuts, 1/4 cup shaved parmesan cheese, 2 cloves garlic to a food processor. While blending, drizzle in about 1/4 – 1/2 cup of extra virgin olive oil, more if needed. Process until smooth. Add salt and pepper to taste.
