Ingredients
  

  • 12 oysters shucked
  • 2 tablespoons white wine vinegar
  • 2 tablespoons Champagne, Prosecco or Cava dry
  • 1 tablespoon shallot minced
  • 1 teaspoon parsley fresh and chopped
  • 1/4 teaspoon black pepper freshly ground

For serving

  • 1 lemon cut into wedges

Instructions
 

  • Place shucked oysters over ice or rock salt on a chilled platter.
  • Combine vinegar, sparkling wine, shallot, parsley and black pepper in a small bowl.
  • Serve with lemon wedges and bubbly (for drinking).
