- 12 oysters shucked
- 2 tablespoons white wine vinegar
- 2 tablespoons Champagne, Prosecco or Cava dry
- 1 tablespoon shallot minced
- 1 teaspoon parsley fresh and chopped
- 1/4 teaspoon black pepper freshly ground
Place shucked oysters over ice or rock salt on a chilled platter.
Combine vinegar, sparkling wine, shallot, parsley and black pepper in a small bowl.
Serve with lemon wedges and bubbly (for drinking).
