Apple Pie Overnight Oats
Cinnamon and honey glazed apples tossed with oats, milk and chia seeds then topped with vanilla yogurt, toasted walnuts and a generous drizzle of honey. This spiced breakfast is packed with all the fall flavors – and rich in fiber, protein and healthy fats to start your day off right.

For the apples:
- 4 apples diced (use your favorite fall apple)
- 3 tablespoons honey we love Nature Nate's
- 1/2 teaspoon cinnamon
- Pinch salt
For the oats:
- 1 1/2 cups old fashioned rolled oats
- 1 3/4 cups unsweetened soy milk, oat milk or whole milk or other unsweetened milk or milk alt, plus more for serving
- 3 tablespoons chia seeds
- 1 teaspoon apple pie spice
For the topping:
- 1/2 cup whole milk vanilla yogurt
- 1/4 cup chopped toasted walnuts
- 2 tablespoons honey
- Sprinkle apple pie spice
- Sprinkle sea salt
Combine apples, honey, cinnamon and salt in a small saucepan over medium heat. Simmer for 15-20 minutes until apples are tender, stirring frequently. Remove from heat.
In a large bowl, combine oats, milk, chia seeds and apple pie spice. Stir well. Fold in 3/4 of the apple mixture. Reserve the remaining apple mixture in a small bowl for topping. Cover both bowls and refrigerate overnight.
When ready to serve, give the oats a good stir and add additional milk, if desired. Spoon oats into a bowls or mason jars. Top with yogurt, reserved apples, toasted walnuts, honey, apple pie spice and sea salt. Serve.
- For a creamier base, add 1/2 cup whole milk vanilla yogurt to the overnight oats mixture (along with the oats, milk, chia and apple pie spice).
- You can add any type of nut butter in place of the walnuts, if desired. I love the crunch and toasty-ness that the walnuts give, so prefer a crunchy nut in this case.
- To toast walnuts: Preheat oven to 350. Place walnuts in a single layer on a baking sheet. Toast for 8-10 minutes until walnuts are fragrant and lightly toasted. Remove from oven. Let cool.
