Preheat oven to 425. Prepare a baking sheet (or baking dish, if preferred) with tin foil (or parchment paper).
Pat cod very dry with paper towels.
Add crushed crackers, butter, 1 tablespoon dill, zest of lemon, garlic powder, kosher salt and black pepper to a medium bowl. Combine well.
Place cod onto baking sheet. Top fish with cracker topping.
Bake for 10-12 minutes, or until fish flakes easily with a fork and is opaque throughout. Remove from oven.
Sprinkle with remaining tablespoon fresh dill. Serve with lemon wedges, roasted veggies and fresh dinner rolls.
