Now that the weather is cooling down a bit and we can comfortably turn on the oven without sweating, it’s time to start baking and roasting all-the-things again. Not surprisingly, I am most excited about getting back into making easy baked fish recipes (especially salmon and cod) and seafood sheet pan meals.  With some pumpkin bread and apple crisps thrown in too, for good measure and balance ;).

This baked cod recipe is one of our favorite cooler weather dishes. It has an irresistible crust, cooks in about 10 minutes and has a very basic ingredient list. The only thing you may not have on hand already in your kitchen is fresh dill. I think we are all in need of quick and delicious dinner ideas during this uncertain back-to-school season – dinner (especially now) should be fuss-free and as simple as possible.

Where does this cod come from?

Wild Atlantic cod is found on both sides of the Atlantic Ocean. In the Northwest Atlantic, cod range from Greenland to Cape Hatteras, North Carolina. In U.S. waters, cod is most common on Georges Bank and the western Gulf of Maine. Atlantic cod is highly regulated so Fulton Fish Market only sells it when it’s in-season and available. Currently, the cod from Fulton Fish Market is coming from Massachusetts.

Cracker Crusted Baked Cod

Fresh wild Atlantic cod topped with a butter cracker, dill and lemon crust and baked until the fish is flaky and the crust is golden brown.  This is an easy, quick and simple dinner that the whole family will love –perfect for busy back-to-school evenings … because we could all use a few extra minutes in our evenings not spent preparing a complicated dinner.

Ingredients
  

  • 16 ounces cod fish, cut into 4 portions
  • 20 butter crackers (we used Ritz) crushed (they easily crush by hand)
  • 2 tablespoons salted butter melted
  • 2 tablespoons chopped dill divided
  • 1 lemon, zested and sliced into wedges you'll use the wedges for serving
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon ground black pepper

Instructions
 

  • Preheat oven to 425. Prepare a baking sheet (or baking dish, if preferred) with tin foil (or parchment paper). 
  • Pat cod very dry with paper towels. 
  • Add crushed crackers, butter, 1 tablespoon dill, zest of lemon, garlic powder, kosher salt and black pepper to a medium bowl. Combine well. 
  • Place cod onto baking sheet. Top fish with cracker topping. 
  • Bake for 10-12 minutes, or until fish flakes easily with a fork and is opaque throughout. Remove from oven. 
  • Sprinkle with remaining tablespoon fresh dill. Serve with lemon wedges, roasted veggies and fresh dinner rolls.
