Fall temps have finally arrived in Maine and we ar Fall temps have finally arrived in Maine and we are expecting a frost tonight (🥶), so it’s time to savor those last garden tomatoes. A good excuse to make a BLT, right? But make it lobster 👌🦞. 

This lobster salad is also fantastic atop greens and served as a salad. 

Lobster Salad BLT Sandwiches
Serves: 4
Time: 10 minutes
Ingredients:
· 8 slices hearty bread
· 2 tablespoons whipped salted butter, softened
· 1 pound cooked lobster, roughly chopped 
· 1/4 cup mayo
· Zest from 1 lemon
· Juice from 1/2 lemon
· 2 tablespoons chopped chives
· Freshly ground black pepper
· 8 slices tomato 
· 8 leaves Bibb lettuce
· 8 slices cooked crispy bacon, halved
· Freshly ground black pepper
Directions:
Toast bread and spread with softened butter on both sides. Combine lobster, mayo, lemon zest, lemon juice, chives and black pepper. Place lettuce leaves onto 4 slices toast. Top with tomato, then lobster salad. Place bacon atop lobster. Top with more freshly ground black pepper. Top the 4 sandwiches with remaining toasted bread. Serve.

🦀+🌶️ = ❤️ Spicy (but not too spicy!), 🦀+🌶️ = ❤️ Spicy (but not too spicy!), cheesy, crabby goodness all in one bite! These Crab-Stuffed Jalapeños are creamy, zesty + topped with golden, crunchy panko. Perfect for game day, or anytime you want to bring a little extra heat to the appetizer table. 🔥

👉 Who’s ready to dig in?

Crab Stuffed Jalapenos
Serves: 8
Total time: 30 minutes
Ingredients:
·  8 large jalapenos halved lengthwise, seeds & membranes removed
·  4 ounces cream cheese, softened 
·  1/2 cup freshly grated sharp cheddar 
·  1 tbsp mayonnaise
·  1/4 tsp Old Bay seasoning
·  1/8 tsp garlic powder
·  Pinch ground black pepper
·  4 ounces cooked fresh lump crab meat (use canned, if needed), picked over for shell fragments (we get our crabmeat from @atlanticedge_lobster in Boothbay)
·  0.66 ounce package chives, thinly sliced, reserved about a teaspoon for garnish
·  2 tbsp plain panko crumbs
·  Zest of 1 lemon
 
For serving:
·  1 lemon, cut into wedges (if you used the lemon zest above, slice that lemon into wedges) (optional)
 
Instructions:
 
Preheat oven to 400°F. Line a baking sheet with parchment paper or foil.
 
Place jalapeno halves cut-side up on the baking sheet.
 
In a medium bowl, mix together cream cheese, shredded cheese, mayonnaise, Old Bay, garlic powder and black pepper until combined. Gently fold in crabmeat and chives. 
 
Spoon the crab filling into each jalapeño half, pressing gently so it stays in place. Sprinkle panko breadcrumbs evenly over the filled jalapeños.

Place the baking sheet in the oven and bake for about 25 minutes, until the peppers are tender and the panko is golden brown. If panko isn’t browning, you can broil for the last minute or so of cooking time. 

Remove from oven. Sprinkle with reserved chives and lemon zest before serving. Serve with lemon wedges.

⛅️The most beautiful fall beach day. The kids ⛅️The most beautiful fall beach day. The kids had their annual physical yesterday in the middle of the school day, so we zipped over to the beach afterwards for a few hours before ⚽️ practice. 

There aren’t many sandy beaches in Maine, but this one of them - Pemaquid Beach, about 40 minutes from where we are Boothbay; much faster via boat. Beautiful sand and water. And deserted, just how we like it. Reminds me of the Cape beaches in the fall when the crowds have gone and you can have the whole place to yourself. Second summer.

🍎Beautiful old old orchard, crisp apples, the b 🍎Beautiful old old orchard, crisp apples, the best donuts & cutest farm store at Biscay Orchard in Damariscotta. Only thing missing was chilly fall weather (it was almost 80, but no complaints!). 

🍎If you plan to visit know that they don’t u-pick honeycrisp (our fave), but they do have them available to buy at the farm stand.
