🦪🐟🦀🦞Many of us don’t need an excuse 🦪🐟🦀🦞Many of us don’t need an excuse to eat seafood regularly - we simply love how it tastes, right? And while you probably already know seafood is packed with health benefits, let’s have a little refresher, shall we?

As #NationalSeafoodMonth comes to a close, here’s why including seafood on our plates at least 2x a week is such a good thing for all of us - from babies to older adults. And I’m not just talking fresh seafood - frozen, tinned/canned, jarred, and even dried seafood all count! 🐟💙

💡 Leading health organizations and the U.S. Dietary Guidelines for Americans recommend eating seafood at least 2 times per week (about 8+ ounces total) for better health throughout the lifespan - and there’s strong research to back it up.

Eating seafood twice a week can help:
• 🧠 Support mental health and reduce risk of depression and anxiety. Fish is like a multivitamin for your brain! Nutrients often low in those with depression (vitamin D, magnesium, zinc) are found in fish.
• ❤️ Reduce risk of heart disease.
• 👶 Improve brain and eye health and development in infants and children - and keep your brain sharp as you age.
• 💪 May improve insulin sensitivity and reduce complications for those with or at risk for type 2 diabetes.
• 🐠 Provide omega-3s (found in salmon, mackerel, sardines, anchovies, trout and other fatty fish), which may help reduce risk of heart disease, depression, dementia, arthritis and even boost overall happiness.

Seafood is a nutrient powerhouse, providing protein, omega-3s, vitamin D, vitamin A, B vitamins, calcium, phosphorus, iron, zinc, magnesium and selenium. Few foods naturally contain both omega-3s and vitamin D - fatty fish are one of the best sources.

And remember, as with all things, variety is key! There are endless fish and shellfish options to choose from. Find a few family favorites but then experiment with some new-to-you seafood species and recipes.

🍎 Apple Pie Overnight Oats: cinnamon-hone 🍎 Apple Pie Overnight Oats: cinnamon-honey glazed apples, rolled oats, chia seeds, and creamy yogurt, finished off with toasted walnuts and a generous drizzle of honey for crunch and sweetness. 🥄
Fall in a jar? Absolutely.

Make the night before, store it in the fridge and breakfast is all set for the morning. 

Use your favorite fall apples (I used Macouns), and swap the walnuts for pecans if you prefer. Want dairy free? Just use non-dairy yogurt + milk.

🍂Pumpkin Muffins with Spiced Cream Cheese. Thes 🍂Pumpkin Muffins with Spiced Cream Cheese. These muffins are bursting with cozy spices, creamy pumpkin and a touch of sweetness. A fave for kids + adults. And, this is a simple enough recipe that kiddos can make from start to finish!👩‍🍳

Makes: 12 muffins
Time: 30 min + cooling time
Ingredients:
For the muffins:
Dry ingredients:
·  1 cup whole-wheat flour 
·  1/2 cup all-purpose flour 
·  1 tbsp pumpkin pie spice 
·  1 tsp baking powder
·  1 tsp baking soda
·  3/4 tsp kosher salt
·  1/2 tsp cinnamon
Wet ingredients:
·  1 (15 oz) can pure pumpkin 
·  1/4 cup maple syrup
·  1/2 cup dark brown sugar 
·  1 large egg, beaten with a whisk
·  1/4 cup whole milk or other milk/milk substitute
·  2 tbsp vegetable oil 
·  1 1/2 tsp vanilla
For the spiced cream cheese (optional):
·  4 oz reduced-fat cream cheese
·  3/4 tbsp pumpkin pie spice
·  1/2 tbsp dark brown sugar
 
Instructions:
For the muffins:
Preheat oven to 425 degrees F. 
 
Line muffin tins with muffin liners and spray with non-stick cooking spray. 
 
Combine flours, pumpkin pie spice, baking powder, baking soda, salt and cinnamon together in a large mixing bowl with a spoon. In a medium mixing bowl, whisk together pumpkin, maple syrup, brown sugar, egg, milk, oil and vanilla. Add wet ingredients to dry and mix just until combined. Add batter to muffin tins, filling about ¾ of the way full.
 
Place in oven in the center of the middle rack. Bake for 5 min, then reduce the oven temperature to 350F. Bake for another 12-15 min, or until a toothpick inserted comes out with no wet batter. Remove from oven.
 
Cool for 10 min, then transfer them to a wire rack to cool completely. 

For the spiced cream cheese:
Stir together cream cheese, pumpkin pie spice and brown sugar until well combined.

Fall temps have finally arrived in Maine and we ar Fall temps have finally arrived in Maine and we are expecting a frost tonight (🥶), so it’s time to savor those last garden tomatoes. A good excuse to make a BLT, right? But make it lobster 👌🦞. 

This lobster salad is also fantastic atop greens and served as a salad. 

Lobster Salad BLT Sandwiches
Serves: 4
Time: 10 minutes
Ingredients:
· 8 slices hearty bread
· 2 tablespoons whipped salted butter, softened
· 1 pound cooked lobster, roughly chopped 
· 1/4 cup mayo
· Zest from 1 lemon
· Juice from 1/2 lemon
· 2 tablespoons chopped chives
· Freshly ground black pepper
· 8 slices tomato 
· 8 leaves Bibb lettuce
· 8 slices cooked crispy bacon, halved
· Freshly ground black pepper
Directions:
Toast bread and spread with softened butter on both sides. Combine lobster, mayo, lemon zest, lemon juice, chives and black pepper. Place lettuce leaves onto 4 slices toast. Top with tomato, then lobster salad. Place bacon atop lobster. Top with more freshly ground black pepper. Top the 4 sandwiches with remaining toasted bread. Serve.
