🌷An omelette fit for Mother’s Day or any spri 🌷An omelette fit for Mother’s Day or any spring celebration. 

Lobster Omelet with Dill Havarti
A three egg omelette stuffed with fresh sweet lobster meat and dill Havarti cheese, then topped with shredded cheddar, more lobster meat and fresh chopped dill. Perfect for breakfast or brunch on any celebratory occasion.
Total time: 10 minutes
Serves: 1
Ingredients:
· 3 eggs, beaten
· 1 ounce dill Havarti cheese, thinly sliced 
· 2 ounces cooked lobster meat, chopped 
· 1/2 ounce shredded reduced-fat cheddar cheese
For serving:
· 1 teaspoon chopped fresh dill 
· Microgreens (optional, for garnish)
· Freshly ground black pepper
Instructions: 
1. Spray a non-stick skillet with cooking oil. Heat pan over medium-low heat. Once hot, add eggs, using a spatula to allow the runny egg to flow under the cooked egg. Once the eggs are almost cooked through, add the Havarti and lobster meat. 
2. Fold one side of the omelet over to the other side. Top with shredded cheddar. Remove from heat. Sprinkle with fresh dill, microgreens and black pepper. 
3. Serve omelet with toast and side salad.

This Crab Grilled Cheese is golden on the outside, This Crab Grilled Cheese is golden on the outside, melty in the middle, and loaded with a zesty crab filling. Old Bay, lemon zest, and sharp cheddar take it over the top.⁠

Ready in 10 minutes—lunch (or dinner!) is served! 

Crab Grilled Cheese
Total Time: 15 min
Serves: 2
Ingredients:
·  8 oz cooked crab meat (fresh or canned)
·  1 tbsp mayonnaise
·  1 tbsp Dijon mustard
·  1/2 tsp Old Bay 
·  1/4 tsp ground black pepper
·  1/4 tsp garlic powder
·  2 tbsp chopped chives 
·  Zest from 1 lemon 
·  4 slices hearty whole grain bread
·  2 tablespoons salted butter, softened 
·  4 slices sharp cheddar cheese
For serving:
·  1 lemon, cut into wedges (if you used the lemon zest above, slice that lemon into wedges) (optional)

Instructions:
In a medium mixing bowl, combine crab meat, mayonnaise, mustard, black pepper, garlic powder, Old Bay seasoning, chives and lemon zest. Stir well until everything is mixed together.

Spread butter on one side of each bread slice.
Heat a skillet over medium low heat. Place two bread slices, buttered side down, in the skillet, carefully (skillet is hot!). Spoon the crab mixture evenly onto each slice of bread. Top each sandwich with two slices of cheddar, followed by the remaining slices of bread, buttered side up.

Cook sandwiches for about 3–4 minutes per side, until the bread is golden brown and the cheese is melted.

Remove from heat. Let the sandwiches cool for a minute, then cut in half. Serve with lemon wedges and an arugula salad with vinaigrette, if desired.

🍊Sweet Citrus & Spice Salmon Bites. This rub + 🍊Sweet Citrus & Spice Salmon Bites. This rub + salmon = a match made in heaven! 

Serves: 4-6
Ingredients:
▪️1.5 lbs salmon fillet, center cut (avoid the thinner tail, if possible), cut into cubes (try to make them approximately the same size, but they’re not going to be perfect)
▪️1 tablespoon dark brown sugar
▪️1 tablespoon dried minced onion
▪️1 teaspoon dried mustard 
▪️1 teaspoon dried orange peel (@mccormickspice has one)
▪️1 teaspoon paprika
▪️1 teaspoon garlic powder
▪️1/2 teaspoon kosher salt 
Directions: preheat grill to high heat. Clean and oil grates. Place rub ingredients and salmon in a resealable plastic bag. Toss gently to coat salmon. Let sit for 10 minutes. 
Reduce heat to medium high. Add salmon. Cook for a few min on each side (or at least three of the sides) until just barely cooked through. Flesh should easily flake with a fork and should be almost opaque. Remove from grill and serve with lemon wedges. Goes great with any veggies on the grill and a loaf of crusty bread.

🍋🐟Golden, buttery, and oh-so-delicious! This 🍋🐟Golden, buttery, and oh-so-delicious! This Pan-Fried Monkfish is bursting with lemony, garlicky goodness. Ready in minutes—because fancy doesn’t have to be fussy!

Monkfish is a firm, meaty, mild flavored and slighty sweet tasting fish. The filets vary from white to pinkish to grayish (swipe to see). As with all seafood, the fillets should smell fresh like the sea, not fishy. Monkfish actually has a flavor and texture very similiar to lobster – in fact, it is often called the poor man’s 🦞. 

One important thing to note about monkfish (aside from the fact that it looks like a monster fish; it’s so ugly! 😱) is that oftentimes when you purchase it, it will still have a grey membrane surrounding the fillet. This thin membrane needs to be removed (most of it anyway). You’ll do that using a paring knife, carefully. It’s not necessary to remove all of the membrane, just do the best you can, because it will seize up when you cook the monkfish, making it a bit unpleasant to eat. If you have a great fish market, ask them to remove the membrane for you.  If that’s not an option, don’t be intimidated by removing the membrane – it takes a few minutes (and a bit of practice), but it’s worth it because monkfish really is one of the most delicious fish out there!

Oysters Rockefeller with a kelp twist! 🌱🦪The Oysters Rockefeller with a kelp twist! 🌱🦪These roasted oysters are packed with umami and are oh so delicious. But they’re not only tasty, they are also good for you. Oysters provide an excellent source of iron and are rich in vitamin B12, selenium, zinc and brain-health promoting omega-3 fats. And the kelp provides an excellent source of iodine, in addition to anti-inflammatory antioxidants and lots of vits & minerals.👏

RECIPE ⬇️
Serves: 4
Time: ~40 min
Ingredients 
·  4 tbsp salted butter
·  1/2 cup seasoned panko crumbs
·  1 shallot, minced
·  1 cup fresh baby spinach, chopped
·  1/4 cup ready to eat kelp from @atlanticseafarms, chopped
·  1 clove garlic, minced
·  2 tbsp rose wine, we love @twomountainwinery 
·  2 tbsp half & half
·  2 tbsp freshly grated parm
·  Kosher salt, to taste
·  Freshly ground black pepper, to taste
·  1 dozen oysters, scrubbed, shucked
·  Lemon wedges, for serving
 
INSTRUCTIONS
Preheat oven to 450 degrees F. 
Melt 2 tbsp butter in a skillet over medium low heat. Add the panko and stir. Add panko crumbs to a small bowl and set aside.  Add the remaining 2 tbsp butter to the skillet over medium heat. Add shallot, spinach and kelp. Cook until the spinach has wilted and water has cooked off. Add the garlic, cook until fragrant. Add the white wine.  Cook another minute or two, then add half and half and parmesan. Cook 2-3 more minutes. Add salt & freshly ground pepper to taste. 

Add oysters to an oyster roasting pan, or alternatively, crumple up a piece of tin foil, then straighten it back out and place on a sheet pan. Nestle the oysters in a single layer into the foil, taking care not to spill the liquor. Be sure the oyster meat has been disconnected from the bottom shell with your oyster knife. 

Add a spoonful of the spinach and kelp mixture atop each oyster. Top with the panko. 

Place into the oven for 12-14 min, or until panko is golden brown, the spinach mixture is bubbly & oysters have begun to curl inward. Serve with lemon wedges & cocktail forks.
🍁Maine Maple Sunday. We visited @goransonfarm i 🍁Maine Maple Sunday. We visited @goransonfarm in Dresden, Maine, this morning and what a treat to tour the sugar house, learn about (and watch!) how maple syrup is made, enjoy the best mini maple ice cream sundaes and more. 

DYK maple sap is clear when it comes out of the maple trees? Then it’s boiled down into syrup which ranges in color pretty drastically, depending on the sugar level and when the sap was collected (early vs late season). 

Thank you Goranson Farm for opening up the farm to all of us today and sharing your wealth of knowledge!
