What you’ll need for the shrimp:

  • Shrimp (16-20 count), peeled & deveined, tail-on (we typically keep these shrimp from North Coast Seafoods in our freezer)
  • Ground cumin
  • Dark brown sugar
  • Chili powder
  • Garlic powder
  • Kosher salt
  • Ground black pepper
  • Olive oil

How to make grilled cumin shrimp

  1. Preheat the grill: Set your grill to high heat and clean the grates. Oil the grates to prevent sticking.
  2. Season the shrimp: In a large ziplock bag, mix the cumin, brown sugar, chili powder, garlic powder, salt, and pepper.
  3. Coat the shrimp: Pat the shrimp very dry and add them to the bag. Seal and shake to coat evenly with the spices. Drizzle in olive oil, seal, and shake again.
  4. Grill the shrimp: Place shrimp on the hot grill, reduce heat to medium, and cook for 2-3 minutes per side until they turn opaque.
  5. Serve & enjoy: Remove from heat, sprinkle with flaky sea salt, and serve with fresh lime wedges for a bright, zesty finish!

Ingredients
  

  • 2 lbs shrimp 16-20 count, thawed if frozen, peeled and deveined, tail on
  • 1 tablespoon ground cumin
  • 1 tablespoon dark brown sugar
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons olive oil

For serving

  • flaky sea salt
  • lime wedges

Instructions
 

  • Preheat grill to high heat. Clean and oil the grates.
  • Add cumin, brown sugar, chili powder, garlic powder, salt and pepper to a large ziplock bag. Pat shrimp very dry. Add shrimp to the bag, seal, and shake to distribute spices evenly. Drizzle in olive oil. Seal and shake again.
  • Place shrimp on grill, reduce heat to medium. Grill until opaque and cooked through, this will only take a few minutes.
  • Remove from heat. Sprinkle with flaky sea salt. Serve with lime wedges.

Notes

This recipe can easily be pan fried, instead of grilled. Just heat some neutral oil in a skillet until very hot then add the shrimp. Cook for about 2 minutes, then flip and cook until the shrimp are just opaque. Also - adding a pat of salted butter to the pan towards the end of cooking is always a good thing to do!
If you have a few extra minutes, let the shrimp sit with the dry rub for 15-20 minutes prior to grilling for more flavor.
You can use smaller shrimp (which would be a higher count), just take care when grilling that they don't fall through the grates.
