Smoked Salmon Scrambled Eggs
Equipment
- 1 skillet
- 1 silicon spatula
Ingredients
- 1 teaspoon olive oil
- 2 tablespoons capers drained
- 1 teaspoon butter
- 4 eggs
- 1/4 cup shredded cheddar
- 2 ounces cold smoked salmon
- 1 tablespoon chives sliced
Instructions
- Add oil and capers to a medium skillet over medium heat. Pan fry just until crispy, stirring frequently. Set aside on a paper towel.
- Add butter to skillet over medium heat. Whisk eggs and pour into skillet. When eggs begin to cook on the outer part of the skillet, pull it in and let the uncooked egg flow to the outside. Cook eggs until desired doneness – we like ours still a bit wet.
- Add cheese. Remove from heat.
- Tuck salmon into eggs.
- Top with fresh chives, fried capers and lots of freshly ground black pepper.
- Serve with buttered toast and a side salad with lemon vinaigrette. (optional)
