The easiest and best summer appetizer there ever w The easiest and best summer appetizer there ever was. It’s also perfectly acceptable to eat this every night for dinner through the end of 🍅 season. 

𝗕𝘂𝗿𝗿𝗮𝘁𝗮 𝘄𝗶𝘁𝗵 𝗣𝗲𝘀𝘁𝗼 𝗮𝗻𝗱 𝗧𝗼𝗺𝗮𝘁𝗼𝗲𝘀. Creamy burrata topped with pesto, halved cherry tomatoes, freshly ground black pepper, sea salt and a drizzle of balsamic glaze. A celebration of all the summer flavors.

🇺🇸4th of July Seacuterie. 💃 💃 How-to ⬇️:

Summer Seacuterie
Serves: 8-10
Ingredients:
· 1 lb cooked shrimp
· 1 lb cooked lobster meat, chopped
· 1 recipe smoked salmon dip (below)
· 1/2 cup seaweed salad @atlanticseafarms
· 1/4 cup salted butter, melted
· 1/4 cup cocktail sauce
· 1 4-ounce container Boursin bites
· 4 ounces dill havarti
· 1 English cucumber, sliced
· 4 radishes, sliced
· 1/4 cup olives
· Whole grain crackers
· Dill (for décor)
· 1 lemon, cut into wedges
· Sea salt
Directions:
Arrange all ingredients on a circular platter on top of crushed ice – placing lobster meat near melted butter, shrimp near cocktail sauce and smoked salmon dip. Decorate with mini American flags or toothpicks and serve with red white and blue napkins. 

For the smoked salmon dip
· 3.5 ounce can smoked salmon skin removed, flaked (we like @fishwife)
· 1/2 cup whipped cream cheese
· 2 tablespoons chopped fresh dill
· 1 tablespoon minced red onion
· 1 teaspoon fresh lemon juice
· 1/8 teaspoon freshly ground black pepper

🚤 After 12 (or more?!) consecutive Saturdays of 🚤 After 12 (or more?!) consecutive Saturdays of rain, we finally got a good one. Took the boat out for its first spin of the year. Summer, thanks for finally showing up 🙌.

Oh and boats are never without their own drama, right? Adrian tried to launch the boat twice prior to this trip - electrical and motor issues left him dead in the water. Looks like 3rd time is the charm. 🤞

A field trip to Belfast, Maine to see @verticalbay A field trip to Belfast, Maine to see @verticalbaymaine sea scallops in action. Incredible. And such a treat to taste them raw - sweet & clean - so tasty! 

Vertical Bay is one of the only sea scallop farms in the US. The farm is located in Penobscot Bay, off the coast of Belfast. They grow their scallops from wild seed to market size, spending about 3 years in the care of Vertical Bay. The scallops live in nets on the farm for their first year, then they are hung on lines and suspended into the water with plenty of space to grow (this process is called ear-hanging and you’ll see this in the video). 

Because scallops are filter feeders, they require no feed, fertilizers or inputs. Their food comes from the clean, cold & nutrient-rich bay water.
