🐟Easy Air Fryer Salmon Bites. No special ingred 🐟Easy Air Fryer Salmon Bites. No special ingredients needed here! Just salmon, olive oil, salt, garlic powder and black pepper — and optional lemon zest + parsley. Kid-friendly, ready in less than 10 minutes. Share with a friend who loves things simply seasoned! 

Air Fryer Salmon Bites
Serves: 4
Time: 15 minutes 
·  1.5 lb salmon fillet, patted very dry, cut into ~1 inch cubes
·  1 tablespoon olive oil
·  1/2 teaspoon garlic powder
·  1/4 teaspoon kosher salt
·  1/4 teaspoon freshly ground black pepper
·  1 organic lemon, zest of and cut into wedges 
·  Chopped parsley, optional
·  Sea salt
Instructions:
Preheat air fryer to 390°F. Spray the air fryer basket with cooking oil. 
 
Place salmon cubes in a medium bowl. Drizzle with olive oil, sprinkle with garlic powder, salt and pepper. Toss well. 
 
Place salmon in a single layer into the air fryer, making sure to not crowd the salmon – pieces should not be touching. Cook for about 3-4 minutes, toss then cook another few minutes until salmon is cooked through. Salmon is done when it flakes easily and reaches an internal temperature of about 140 degrees F. Salmon will continue cooking once it’s removed from heat to a safe internal temp of 145 degrees F. 

Sprinkle bites with sea salt, lemon zest and chopped parsley. Serve with lemon wedges.

Lobster & Corn Salad with Creamy Basil Vinaigrette
Time: 20 minutes
Serves: 4
Ingredients:
·  4 ears fresh corn, shucked 
·  1 tbsp canola or avocado oil
·  8-oz container @littleleaffarms baby crispy green leaf
·  1 1/4 cups snap peas, trimmed, halved
·  4 radishes, thinly sliced
·  12-16 oz fresh lobster meat, cooked, rough chop
·  2 cups cornbread croutons (homemade* or store-bought)
Creamy Basil Vinaigrette:
·  4 cups loosely packed basil leaves
·  1/2 cup mayo
·  1/4 cup whole milk yogurt
·  1/4 cup extra virgin olive oil
·  Juice from 1 lemon
·  2-3 cloves garlic
·  Kosher salt, to taste
·  Freshly ground black pepper, to taste
Directions: 
Preheat grill to high. Clean & oil grates. Brush corn with oil. Reduce heat to medium high. Place corn on the grill; grill 5-7 min, turning after about 3 min. Remove corn from grill. When cool enough to handle, cut kernels from corn.
 
For dressing: add basil, yogurt, mayo, lemon juice, garlic & olive oil to a food processor. Blend until smooth. Add salt & pepper to taste. 
Add lettuce to large bowl. Top with corn, snap peas, radishes, lobster meat & croutons. Drizzle with vinaigrette. Toss. Serve. 
 *For croutons, cube day-old cornbread, toss with 2 tbsp olive oil, 1/4 tsp of salt. Bake 15-20 min til golden brown, turning halfway through.

Shrimp is a staple in our freezer, year round. Tip: When looking for frozen sustainable shrimp, look for those with a third party certification on the packaging - such as ASC (aquaculture stewardship council) or BAP (best aquaculture practices).

🍊Sweet Citrus & Spice Salmon Bites. You’ll wa 🍊Sweet Citrus & Spice Salmon Bites. You’ll want to SAVE this recipe ⬇️ for summer grilling!🔥

Serves: 4-6
Ingredients:
▪️1.5 lbs salmon fillet, center cut (avoid the thinner tail, if possible), cut into cubes (try to make them approximately the same size, but they’re not going to be perfect)
▪️1 tablespoon dark brown sugar
▪️1 tablespoon dried minced onion
▪️1 teaspoon dried mustard 
▪️1 teaspoon dried orange peel (@mccormickspice has one)
▪️1 teaspoon paprika
▪️1 teaspoon garlic powder
▪️1/2 teaspoon kosher salt 
Directions: preheat grill to high heat. Clean and oil grates. Place rub ingredients and salmon in a resealable plastic bag. Toss gently to coat salmon. Let sit for 10 minutes. 
Reduce heat to medium high. Add salmon. Cook for a few min on each side (or at least three of the sides) until just barely cooked through. Flesh should easily flake with a fork and should be almost opaque. Remove from grill and serve with lemon wedges. Goes great with any veggies on the grill and a loaf of crusty bread. Enjoy!!

We love this sauce on salmon, swordfish, scallops, striped bass, bluefish, haddock, shrimp … the list goes on! SAVE this recipe to make next time you’re seasoning your fish or shellfish with simple salt and pepper and need a little something to jazz it up. 

RECIPE:
▪️1/2 cup sour cream (can use reduced-fat, if preferred)
▪️2 cloves garlic, minced
▪️2 tablespoons chopped fresh dill
▪️1/4 teaspoon kosher salt
▪️1/8 teaspoon freshly ground black pepper
Stir to combine and serve with seafood of choice!
