How do you make these scrambled eggs?

  1. Fry the capers in a skillet with a bit of oil until crispy. Set aside.
  2. Beat the eggs and pour into the skillet. Stir occasionally, creating soft creamy curds.
  3. Top eggs with shredded cheese.
  4. Tuck the smoked salmon pieces into the eggs.
  5. Top with chives, fried capers and freshly ground black pepper.
  6. Serve with buttered toast and a side salad with vinaigrette (optional).

  • Buttered toast (we used a local olive bread from When Pig’s Fly Bakery) or toasted bagels.
  • Fresh fruit – any in season fruit – berries, citrus and more.
  • A green salad with a vinaigrette – we served our eggs with a simple arugula salad and citrus vinaigrette.
  • Avocado! We love adding avocado here for additional richness, creaminess and nutrition (healthy fats + fiber + lots of vitamins and minerals).

Tips for the best smoked salmon scrambled eggs

  • Keep the heat low. Scrambled eggs are best cooked low and slow for a creamy texture. Avoid overcooking the eggs, as this can make them dry.
  • Experiment with fresh herbs: We’ve used chives here, but dill is a classic choice, and parsley or tarragon would be delicious as well.
  • Grate your own cheddar. Look, we are all strapped for time some (many) days. But freshly grated cheddar is SO much better than the pre-shredded variety which has added ingredients to prevent the cheese from molding or sticking together in the bag. If you have a couple minutes to shred your own cheese, it’s worth it.

  • 1 silicon spatula

Ingredients
  

  • 1 teaspoon olive oil
  • 2 tablespoons capers drained
  • 1 teaspoon butter
  • 4 eggs
  • 1/4 cup shredded cheddar
  • 2 ounces cold smoked salmon
  • 1 tablespoon chives sliced

Instructions
 

  • Add oil and capers to a medium skillet over medium heat. Pan fry just until crispy, stirring frequently. Set aside on a paper towel.
  • Add butter to skillet over medium heat. Whisk eggs and pour into skillet. When eggs begin to cook on the outer part of the skillet, pull it in and let the uncooked egg flow to the outside. Cook eggs until desired doneness – we like ours still a bit wet.
  • Add cheese. Remove from heat.
  • Tuck salmon into eggs.
  • Top with fresh chives, fried capers and lots of freshly ground black pepper.
  • Serve with buttered toast and a side salad with lemon vinaigrette. (optional)
